Chicken Salad

Two chicken breasts - cooked and shredded

1/4 cup walnuts - chopped

Enough mayonnaise to moisten.

Salt and pepper to taste.

1/8 t. garlic powder

Mix and spread on english muffin.

Put under broiler.

When starting to brown, top with sharp cheddar cheese.

Done... when cheese is melted.

Scramble Bake

In bowl... mix 1-2 cooked potatoes-cubed, diced onion,

diced green onion, and chopped ham.

Salt and Pepper to taste.

In separate bowl whisk six eggs, add to the potato mixture.

Stir all together.

Pour into a lightly greased casserole dish and bake at

325 degrees for 30 minutes, or until firm.

Add diced tomatoes on top.

Jiffy Cornbread Mix, plus...

Add ingredients according to directions, also

add in 1/4 cup sour cream, and 1 cup

sharp cheddar cheese - shredded.

Bake as directed.

Enchilada Sauce

Enchilada Sauce

1 T. oil 1 T. flour

2 t. minced onion 1/2 t. oregano

1 t. dried parsley 1/8 t. salt 1/8 t. pepper

1/2 t. dried basil 1-2 t. chili powder

6 oz. tomato sauce

2 cups water

In saucepan... on low heat, heat oil, add flour and blend.

Add in... tomato sauce, water, onion, and all other spices.

Blend well. Turn up heat, and then simmer for 15 - 20 minutes.

Two cans vegetarian chili
16 oz. Velveeta - cubed
In sauce pan, heat on low and blend until creamy.

Great on tacos, enchiladas, or a dip for chips.

Roasted Potatoes

Cut potatoes into fourths.

In bowl... toss potatoes with a dash of oil, salt, pepper, and dried rosemary.

Lay out potatoes skin side down on a sheet pan.

Roast in a 400 degree oven until browned and fork tender.

Lemon Bread

1/3 cup melted butter

1 cup sugar

2 eggs

1/4 t. almond extract

1 1/2 cup flour

1 t. baking powder

1/2 salt

1/2 cup milk

1 T. grated lemon peel

Mix butter and sugar. Blend in eggs one at a time. Add extract, and mix.

Sift together the dry ingredients. Add to the egg mixture alternately with the milk.

Blend just enough to mix. Fold in lemon peel.

In a greased loaf pan, bake in a 325 degree oven for 50 - 60 minutes.

Glaze immediately with a mixture of 3 T. lemon juice and 1/4 cup sugar.

Cool for 10 minutes. Remove, and flip right side up.

Chili

3 T. oil

1 1/2 pounds ground beef or turkey

1 t. salt

1 onion - chopped

3 cloves garlic - minced

2 t. chili powder

2 t. ground cumin

1 t. dried oregano

1/2 t. ground cinnamon

1 1/2 cups chicken broth

1 cup water

1 - 28 oz. can crushed fire-roasted tomatoes

2 T. tomato paste

2 T. honey

2 - 15 oz. cans of black beans - drained and rinsed

1 T. lime juice

Heat 1 T. oil, add ground beef and brown.

Transfer meat, using a slotted spoon, to a small bowl.

Sprinkle with salt and set aside.

Drain liquid from pot, add remaining oil and saute onion until soft.

Add garlic and saute another minute.

Stir in chili powder, cumin, oregano, and cinnamon.

Cook 1 minute.

Add broth, water, beef, tomatoes, tomato paste, and honey.

Reduce heat and simmer 1 hour.

Add beans and lime juice, cook another 5 minutes.

Along with cornbread... A delicious meal!

Saute sliced bell peppers in 1/2-1 T. oil.

Remove peppers and set aside.

Cook chicken - cut into strips, in same pan.

Add 1 - 2 T. taco seasoning mix and 1/4 cup water.

Put the peppers back in and mix well.

Simmer for 10 - 15 minutes.

Peanut Butter Cookies

Cream together...

1/ 2 cup softened butter

1/2 cup peanut butter

1/2 cup white sugar

1/2 cup brown sugar

Add... 1 egg

2 T. milk

1 t. vanilla

Mix.

Stir in flour mixture...

1 3/4 cup flour

1/2 t. salt 1 t. baking soda

Blend well.

Shape by teaspoon into balls. Roll in white sugar.

Place on cookie sheet. Press down gently with fork.

Bake in a 350 degree oven for 12 - 15 minutes.

In the Cupboard

Salsa

4 cups tomatoes - chopped

1 cup onion - chopped

1/2 cup chilies - chopped

1/2 t. garlic salt

1/2 t. pepper

1/2 t. salt

2 T. vinegar

In large saucepan... combine all ingredients.

Bring to boil. Simmer for 20 minutes.

Ladle salsa into sterilized jars and seal.

If you do not want to can, it freezes well.

I really miss having home grown tomatoes in the winter.

When you know you are picking the last ones... make this.

It is the next best thing.

1 onion - chopped

1/2 bell pepper - chopped

In large saucepan... saute and brown in 1 - 2 T. oil.

Add:

2 - 14 oz. cans of stewed diced tomatoes

1 - 14 oz. can tomato sauce

1 small can of V-8 vegetable juice

1 grated carrot

1 T. Italian seasoning

A sprinkle of garlic powder

1/2 t. salt

1/2 t. sugar

Simmer for 20 minutes. Stir occasionally.

Fry Bread

3 cups all-purpose flour

2 t. baking powder

1/2 t. salt

1/2 t. dried Rosemary Leaves

1 cup warm water

oil for frying (I used Canola oil)

Mix the four, baking powder, salt, and rosemary. Pour in the warm water and mix. On a floured surface, knead the dough until it is soft, not sticky. Place in covered bowl for 15 minutes. Divide the dough into 10 - 12 equal-sized pieces. On a floured surface roll each one out until approximately 5 inches in diameter.
Fry one at a time in the heated oil until golden brown.

Serve warm... with honey.

A Tasty Hodgepodge

Leftover meatloaf, potatoes, and carrots - crumbled and cubed.

Mix and put in a lightly greased casserole dish. Sprinkle salt, pepper, and dried rosemary leaves on top.

Whisk 7 eggs in a bowl. Pour over top of the mixture. It will settle through.

Bake in a 350 degree oven for 1/2 hr. - 45 minutes.

2 lbs. lean ground beef

1 t. salt

1/4 t. pepper

1/4 cup diced onion

1 egg

1/4 cup ketchup

1 T. mustard

2 t. dried parsley

1 cup oats

Mix all ingredients. Put in lightly greased loaf baking dish. Bake in a 325 degree oven for 1 - 1/2 hours.

Cooked carrots - cover carrots in saucepan with water. Bring to boil and cook until tender. Drain. Add butter and brown sugar. Mix and simmer for 5 minutes.

Grilled Corn on the Cob

Herb Compound Butter...
Mix 1/2 cup softened, unsalted butter with 1/2 T. each of fresh, chopped parsley, thyme, rosemary, and chives.
Spread on the corn cobs before grilling and a bit during. Depending on how hot your grill is, about 15 minutes for cooking. Turn the cobs often.

One Pot...Three Dinners

Two pounds ground turkey, one can pinto beans (drained and rinsed), taco seasoning. Cook turkey, add seasoning, simmer for 10 minutes, add pinto beans and warm through. Divide meat mixture into three containers. Freezes well.

Enchiladas... Add a can of petite diced tomatoes to meat mixture. Put a spoonful of mixture in the middle of a flour tortilla. Top with 3 T. shredded cheese. Roll and lay seam side down in a lightly greased pan. Bake in a 350 degree oven for 30 - 40minutes. Cover the first 20 minutes.

Taco Salad... Layer lettuce, meat mixture, cheese, and tomatoes.

Tostada... Fry corn tortillas in vegetable oil for 1-2 minutes until crisp. Layer meat mixture, cheese, and lettuce.

Meatball Soup

My sister made this delicious soup. It is a recipe from... Authentic Southwestern Cooking, Lynn Nusom.

Sopa De Albondigas (Meatball Soup)

Meatballs:
1 pound ground beef
2 cloves garlic - minced
1/2 t. ground red chile
1/2 t. salt
1/2 t. pepper
1 cup bread crumbs
1 egg
1/2 yellow onion - finely chopped

Soup:
2 T. olive oil
1/2 yellow onion - chopped
3 medium-size carrots - thinly sliced
1 T. chopped fresh parsley
1 t. dried oregano - crushed
2 ripe, red tomatoes - peeled and chopped
4 cups beef stock or broth
2 cups water
1 bay leaf

To make the meatballs... Mix together the first six ingredients. Add egg and stir into the mixture. Add onion, mix well, and shape into small balls.

For the soup... Pour the oil in a large soup pot and saute the onion for 2 - 3 minutes. Add the carrots, parsley, oregano, and tomatoes, and saute for 3 - 4 more minutes. Add the beef stock, water and bay leaf, and bring to a boil. Add the meatballs, a few at a time, so that the boiling remains constant. After all the meatballs are in, reduce the heat, cover, and simmer for 30 minutes. Remove bay leaf and serve.
I sprinkled shredded monterey jack on top.

And for dessert. Yum!

All are cooked and chicken is shredded.

Mix all with 1/2 cup chicken broth and 1 cup shredded monterey jack cheese. Put in a lightly greased casserole dish. I had enough for a 7 x 10.
Topping... 1 1/2 cup breadcrumbs and 3 T. melted butter. Mix.
Spread on top and bake in a 350 degree oven for 30 - 40 minutes until top is browned.

Flourless Oatmeal Peanut Butter Cookies

I saw this recipe over at Carrots 'N' Cake.

1 1/4 cup oats

1/4 cup sugar

1/2 t. baking powder

1 egg

2 T. butter

1/4 cup peanut butter

1/4 cup chocolate chips (optional)

Beat egg, butter, and peanut butter. Add oats, sugar, and baking powder. Mix. Stir in chocolate chips. Drop by teaspoon onto cookie sheet. Bake in a 350 degree oven for 8 - 10 minutes.

I have made them with and without the chocolate chips. Both are delicious!

Fry corn tortillas in hot canola or vegetable oil. Dip tortilla in enchilada sauce. Put a spoonful of your cooked meat (turkey, beef, chicken, or pork), and shredded cheese in the middle. Fold edges over and lay seam side up in pan. Bake in a 350 degree oven for 20 - 30 minutes. The first 15 minutes cover with foil.

Rice

3/4 cup brown rice

1 cup chicken broth or water

1/4 cup enchilada sauce or 1/4 cup salsa

1 T. butter

1/8 t. salt

In casserole dish... pour warmed broth or water over the rice. Stir in butter,

enchilada sauce or salsa, and salt. Cover and bake in a 350 degree oven for 35 - 45 minutes.

3 large carrots - cut into 1 inch chunks
1/2 large onion, sliced
1/2 cup flour
1/8 t. garlic salt
1/8 t. pepper
10 ounce can condensed beef broth
1/2 cup dry red wine
1 T. Worcestershire sauce

Combine beef, carrots, and onions in the slow cooker/crock pot. In bowl... combine flour, salt, and pepper. Whisk in the broth, wine, and Worcestershire. Add to the beef mixture and mix well. Cook on high for 1 hour, then turn to low and cook an additional 5 - 6 hours.

Fry corn tortillas in hot canola or vegetable oil until crisp. One at a time. It takes only a few seconds for each one. Top with carnitas, pinto beans, and shredded cheese.

Cherry Chip Cornflake Cookies

I haven't made these for so long. When we moved to California in 1975, we couldn't find the cherry chips here. Our aunt from Minnesota would send us a package every so often. Now with the internet, I'm sure we could probably order them! My niece found the chips in Target recently. Yum!

2 1/4 cups flour

1/8 t. salt

1 cup butter

1/2 cup sugar

1 egg

1 t. almond flavoring

3/4 cup crushed cornflakes

1 6oz. package cherry chips

Cream butter and sugar. Mix in egg and extract. Add the flour and salt, mix until smooth. Stir in the cornflakes and chips. Roll into 1 inch balls. Press with fork and sprinkle with sugar. Bake in a 350 degree oven for 10 - 12 minutes.

Population 840.
The Crawdad Festival is held every year on Father's Day. It brings the population to 200,000 during its three day run.

One Pot Tater Tot Casserole

1 pound ground hamburger or turkey

1 can mixed vegetables

1 can cream of mushroom soup or cream of celery soup

Frozen tater tots (I like the mini tater tots)

Brown/fry ground turkey. Season with salt and pepper. Mix in the vegetables and soup. Layer the tater tots on top. Bake in a 350 degree oven for 30 minutes or until bubbly, and tater tots are crisp.

Remember these? Childhood favorite for me, and still is!

Cut hot dogs in thirds. Wrap a Pillsbury Crescent Roll around the hot dog. Bake in a 375 degree oven for 15 minutes.
