Five or six boneless chicken breasts - depending on size, or if you prefer, use chicken thighs. My Grandma's recipe actually states... 3 lbs. chicken parts (deboned). I chuckled when I read "chicken parts". For some reason that made me laugh.One can cream of chicken soup
1/2 cup mayonnaise
1/2 t. curry powder
Parmesan Cheese - It doesn't state the amount but I thought a tablespoon or two would do.
I added about 1/4 cup chopped onions.
Place chicken in a nonstick spray pan. I used a 9 x 13 casserole dish and sprayed the bottom with vegetable spray. In bowl, mix other ingredients and spread over the chicken. Cover with foil and bake at 350 degrees for 45 minutes.
This is what I did with the leftovers. Shredded the chicken, tossed in a handful of frozen peas, warmed it up in a saucepan on the stove top, and spooned it over rice. Delicious. Basically, this is a very easy curry sauce.

My grandma made something similar when we'd come to visit...never got the recipe ~ so this is awesome :) Laughing as well about "chicken parts" kind of scary when you hear "parts" in any meat these days ~ lol!!

You know, since seeing this dish, I tried something else. I took Chicken A La King and put it over a split baked potato. It's really yummy. You should try it, if you never have.
