Chicken Pie

3 small chicken breasts
1/2 cup chopped onion
1/2 t. salt, 1/4 t. pepper
1 cup shredded cheese
1 cup milk, 2 eggs
1/2 cup Bisquick baking mix


Cook chicken breasts.  This is how I did it.... In saucepan, cover chicken breasts with water.  Add 1 T. apple cider vinegar, and 1/2 onion - cut in cubes.  Bring to boil and boil for 20 minutes.  When cooled, shred chicken and toss with salt and pepper. 



Spread chicken on bottom of lightly greased pie plate.  Sprinkle with cheese.  I used mozzarella, but you can use whatever you have.  With an electric mixer, beat milk, eggs and Bisquick on medium speed for one minute or until smooth.  Pour this over the chicken and cheese.  Bake at 350 degrees for 30 minutes.

I always had a box of Bisquick around when we lived at our other farm but haven't picked up a box in ages. I need to do that! This looks wonderful Joan.
