Enchilada Sauce
1 T. oil 1 T. flour
2 t. minced onion 1/2 t. oregano
1 t. dried parsley 1/8 t. salt 1/8 t. pepper
1/2 t. dried basil 1-2 t. chili powder
6 oz. tomato sauce
2 cups water
In saucepan... on low heat, heat oil, add flour and blend.
Add in... tomato sauce, water, onion, and all other spices.
Blend well. Turn up heat, and then simmer for 15 - 20 minutes.

I canned some hot sauce, enchilada sauce last summer -- need to use it! :)
I love making my own enchilada sauce, and much prefer it to canned. the only recipe I've ever had is from Suzanne at Chickens in the Road blog. I'm trying this one - it seems much easier. Thanks for reminding me that it's time to make enchiladas. It's like you read my mind across cyber space! wishing you all the best in 2012 Joan.
