Farmer's Market



Asparagus
Red Onion
Egg
Salt and Pepper



I have seen a picture of this meal so often.  In magazines and online.  It always looked so good, and finally I decided to make it.  This now will be made often, loved it. 
On low to medium heat, saute the asparagus and red onion in 1 T. garlic olive oil and 1 T. butter, until the asparagus is tender.  Top with an egg, sunny side up.  Sprinkle with salt and pepper.

Potato Pancakes


Potatoes - cooked
Vegetable - cooked
Eggs
Oil and Butter
Seasonings




When I was young our Sunday noon dinner was always pot roast, mashed potatoes with gravy, and a vegetable.  Usually green beans.  With the leftover potatoes and vegetable my Mom would make potato pancakes the following week.
 
Having extra baked potatoes and roasted broccoli this week, I mashed the potatoes including the skin, along with the broccoli, then seasoned it with salt and pepper, two eggs (use 1 egg to 1 cup of potatoes), and mixed it all together.  In a skillet, on medium heat... 2 T. oil and 1 T. of butter.  Form the potato mixture into patties and brown on both sides.  Top with a pat of butter or an egg, sunny side up.

Tacos


Cook/fry 1 pound ground turkey. 
Add taco seasoning and 1/4 cup water. 
Stir, and simmer for 15 minutes. 
Top with chili beans, shredded cheese,
guacamole, and diced tomato.
